Spiced Apple Cider Donut Loaf

  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda

  • 1/2 cup unsalted butter, softened
  • 1 cup granulated sugar
  • 2 large eggs
  • 1 cup apple cider
  • 1 teaspoon vanilla extract
  • 1/4 cup granulated sugar (for topping)
  • 1 teaspoon ground cinnamon (for topping)

Instructions

  1. Preheat the oven to 350°F (175°C) and grease a loaf pan.
  2. In a bowl, whisk together the flour, baking powder, baking soda, cinnamon, nutmeg, and salt.
  3. In another bowl, cream the butter and sugar until light and fluffy. Beat in the eggs, one at a time, then mix in the apple cider and vanilla.
  4. Gradually add the dry ingredients to the wet ingredients until just combined.
  5. Pour the batter into the prepared loaf pan.
  6. Mix the sugar and cinnamon for the topping, and sprinkle it on top of the batter.
  7. Bake for 50-60 minutes or until a toothpick inserted into the center comes out clean.
  8. Allow to cool before slicing. Enjoy!

Notes

For a sweeter finish, drizzle a glaze made from powdered sugar and milk or apple cider on top after cooling.
