    1 lb fresh salmon fillets, cut into bite-sized pieces

  • 1/4 cup cornstarch
  • 1/4 cup flour
  • 2 eggs, beaten
  • 1/2 cup panko breadcrumbs
  • 2 tbsp mayonnaise
  • 2 tbsp sweet chili sauce
  • 1 tbsp sriracha sauce (adjust to taste)
  • 1 tsp rice vinegar
  • 1/2 tsp sesame oil
  • 1/4 tsp garlic powder
  • 1/4 tsp ginger powder
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 350°F (175°C) or prepare an air fryer.
  2. In a bowl, mix cornstarch and flour. Coat the salmon pieces in this mixture, dip in beaten eggs, then coat with panko breadcrumbs.
  3. Fry the salmon bites in hot oil for 3-4 minutes per side, or use an air fryer for 8-10 minutes, flipping halfway through, until golden brown and crispy.
  4. In a small bowl, whisk together mayonnaise, sweet chili sauce, sriracha, rice vinegar, sesame oil, garlic powder, and ginger powder.
  5. Toss the crispy salmon bites in the Bang Bang sauce until well-coated. Serve immediately with your favorite side.

Notes

For extra heat, add more sriracha or cayenne pepper to the sauce. For a milder version, reduce the sriracha or use honey for sweetness.
