Ingredients
Flank steak, 1 lb (450g)
Scotch bonnet peppers, 2 finely chopped
Garlic, 4 cloves, mincedFresh thyme, 2 sprigsAllspice, 1 tspSoy sauce, 2 tbspBell peppers, 1, slicedOnion, 1, slicedOlive oil, 2 tbsp
Instructions
Marinate the steak with scotch bonnet peppers, thyme, garlic, soy sauce, and allspice for at least 30 minutes.
Heat olive oil in a pan over medium-high heat and cook the steak for 4-5 minutes per side for medium-rare.
In the same pan, sauté bell peppers and onions for 2-3 minutes until soft.
Pour the marinade into the pan and let it simmer to create a sauce.
Serve the steak with the sauce on top, alongside rice and peas and fried plantains.
Notes
For a milder version, reduce the amount of scotch bonnet peppers.
You can also grill the steak instead of pan-searing for added smokiness.
