- 1 cup cottage cheese
- 2 cups all-purpose flour
- 1/2 cup brown sugar
- 2 eggs
- 1/4 cup milk
- 1 tsp vanilla extract
- 1 tsp cinnamon
- 1/2 tsp baking soda
- 1/4 tsp salt
Instructions
- Preheat your oven to 350°F (175°C). Grease a loaf pan.
- In a large bowl, mash the bananas and mix in the cottage cheese, eggs, milk, and vanilla extract.
- In another bowl, whisk together the flour, sugar, cinnamon, baking soda, and salt.
- Add the dry ingredients to the wet ingredients and stir until just combined. Do not overmix.
- Pour the batter into the prepared loaf pan and bake for 60-65 minutes, or until a toothpick comes out clean.
- Let it cool in the pan for 10 minutes, then transfer to a wire rack to cool completely.
Notes
For a healthier option, use whole wheat flour and add nuts or chocolate chips for extra flavor and texture.
