Instructions

- Add the chopped onion and minced garlic, sautéing until fragrant.
- Add the diced cassava or yam and cook, stirring occasionally to coat evenly with the oil and seasonings.
- Cook until the cassava or yam is tender and golden, ensuring it doesn’t overcook and become mushy.
- Season with salt and pepper to taste, and serve with rice or beans.
Notes
Ensure not to overcook the cassava or yam to preserve its texture. Garnish with fresh cilantro or parsley, and add a squeeze of lime for extra flavor.
