- 1/4 cup cornstarch
- 1/4 cup all-purpose flour
- 2 eggs, beaten
- 1/2 cup breadcrumbs
- 2 tbsp mayonnaise
- 2 tbsp sweet chili sauce
- 1 tbsp sriracha sauce (or more for extra heat)
- 1 tsp rice vinegar
- 1/2 tsp sesame oil

- Mix cornstarch and flour in a bowl. Coat the salmon pieces in the mixture, dip in the beaten eggs, then coat in breadcrumbs.
- Heat oil in a pan and fry the salmon bites until crispy and golden brown (about 3-4 minutes per side), or place in the air fryer for 8-10 minutes, flipping halfway through.
- In a small bowl, whisk together the mayonnaise, sweet chili sauce, sriracha, rice vinegar, sesame oil, garlic powder, and ginger powder.
- Toss the cooked salmon bites in the Bang Bang sauce until well-coated. Serve immediately.
Notes
For an extra kick, add more sriracha to the sauce. You can also adjust the sweetness with a drizzle of honey or maple syrup.
