    1 lb fresh salmon fillets, cut into bite-sized pieces

  • 1/4 cup cornstarch
  • 1/4 cup all-purpose flour
  • 2 eggs, beaten
  • 1/2 cup breadcrumbs
  • 2 tbsp mayonnaise
  • 2 tbsp sweet chili sauce
  • 1 tbsp sriracha sauce (or more for extra heat)
  • 1 tsp rice vinegar
  • 1/2 tsp sesame oil
  • 1/4 tsp garlic powder
  • 1/4 tsp ginger powder
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 350°F (175°C) or prepare an air fryer.
  2. Mix cornstarch and flour in a bowl. Coat the salmon pieces in the mixture, dip in the beaten eggs, then coat in breadcrumbs.
  3. Heat oil in a pan and fry the salmon bites until crispy and golden brown (about 3-4 minutes per side), or place in the air fryer for 8-10 minutes, flipping halfway through.
  4. In a small bowl, whisk together the mayonnaise, sweet chili sauce, sriracha, rice vinegar, sesame oil, garlic powder, and ginger powder.
  5. Toss the cooked salmon bites in the Bang Bang sauce until well-coated. Serve immediately.

Notes

For an extra kick, add more sriracha to the sauce. You can also adjust the sweetness with a drizzle of honey or maple syrup.
